Creamy Honey Mustard Chicken And Rice

This creamy dish is a quick and easy weeknight dinner everyone is sure to love!

Ingredients

  • 2lb chicken thighs, diced into 1in cubes
  • 1 Tbsp olive or avocado oil
  • 1 Tbsp seasoning of choice
  • Salt and Pepper, to taste
  • 1 onion, finely diced
  • 4 cloves of garlic, minced
  • 2 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 1 1/4 cup chicken stock
  • 1/2 cup heavy cream
  • 2 cups of cooked rice
  • 1/2 cup shredded cheese
  • Parsley for garnish

Directions

  • On medium-high heat, fry seasoned chicken in oil until browned or about 5 minutes. Set aside.
  • Cook onions until soft, then add minced garlic and cook for around 30 more seconds before adding mustard, honey, stock, and cream. Cook for 3-5 minutes and add chicken and cooked rice.
  • Add salt and pepper to taste, and sprinkle cheese on top. For added flavor, broil for 2-3 minutes or until cheese is bubbling.
  • Top with parsley as garnish and enjoy!

Notes

  • Use chicken breasts and light cream for a low-fat option.
  • Since I use 2lbs of chicken for this, I recommend either frying half the chicken at a time or using two separate pans to fry it.
  • You can use microwave rice for this recipe, but I am not a fan of how that reheats so I always opt in for regular rice which does add some time to this dish (about 20mins to cook the rice beforehand).
  • If you want to add veggies, steamed broccoli, steamed carrots, or both, are a good and healthy option! Add them in with the rice.
