Ingredients
- 1 Tbsp olive oil
- 4 meaty beef short ribs OR large chuck roast
- 1 onion, roughly chopped
- 5 cloves of garlic, minced
- 1 cup of red wine
- 2 3/4 beef stock
- 1 tsp dried thyme
- 1 Tbsp tomato paste
- 1 tsp sugar
- 2 bay leaves
- Salt
- Pepper
- Garlic powder
- 1 Tbsp Worcestershire sauce
Directions
- Heat oil in a large frying pan on high. Season the meat liberally with salt, pepper, and garlic powder, and brown on all sides in the pan.
- Remove the meat from the pan and place in the slow cooker.
- Turn heat down to medium-high and add onion, with a bit more oil if needed. Cook for two minutes while stirring, then add minced garlic and cook for another minute until fragrant.
- Add wine and bring to a bubble. Let simmer for 3-4 minutes, then add beef stock, thyme, tomato paste, sugar, bay leaves, and Worcestershire sauce.
- Stir together and bring to a simmer, then transfer to the crockpot. Place the lid on and cook on low for 6-8 hours.
- Serve over garlic mashed potatoes and enjoy!
